|100 grams Marzipan|
|5 Tbsps Whipped cream|
|500 grams Whipped cream|
|400 grams Nougat|
|4 sheets gelatin|
|3 Tbsps Amaretto|
|60 grams Milk chocolate couveture|
|5 grams Palm oil|
|3 egg yolks|
|3 egg whites|
|90 grams sugar|
|60 grams Pastry flour|
|30 grams peeled, ground almonds|
|1 Tbsp Cocoa|
|1 tsp Baking powder|
- For the decoration, melt chocolate with palm oil in a double boiler. Place parchment paper on a cutting board. Add melted chocolate to a piping bag and drizzle shapes onto paper. Let cool and harden.
- For the cake, beat egg whites with 3 tablespoons of water and sugar until stiff. Stir in yolks. Sift together flour, cocoa, baking powder and almonds and slowly stir into egg foam. Pour batter into springform pan lined with parchment paper and smooth. Bake in preheated oven at 180°C (approximately 350°F) for about 10–15 minutes. Let cool for a few minutes, loosen from pan, remove parchment paper and let cool completely.
- Cut cake once crosswise and place one half on a cake plate. For the filling, mix marzipan with whipped cream mix and spread on top of base layer. Place other layer of cake on top.
- For the topping, soak gelatin sheets in a bowl of cold water until softened, about 10 minutes. Melt nougat with 100 ml (approximately 1/2 cup) of cream in a pot. Dissolve gelatin in warm nougat and stir in amaretto. Place nougat in a metal bowl and chill for about 1 hour. Whip cream, stir into bowl with cooled nougat and spread completely over cake. Cool cake for about 6 hours cool. Place chocolate decorative shapes on cake and serve.
